Asparagus Salsa by Mother Mary’s

This fabulous Salsa is a favorite of those who love the fresh taste of Asparagus. The unique recipe is made with fresh ingredients, including cilantro, and simply has to be experienced to be appreciated. One taste keeps Salsa Lovers coming back for more. In addition to the traditional uses of Salsa, it is great on nachos and tacos and as a sandwich topping.

Recipe for Barker Nachos

1 lb. of meat of choice:  Ground beef, venison, bison, pulled chicken or pork

1/2 tsp. seasoning salt

1/2 tsp. garlic salt

1-2 tsp. chili powder

1/2 tsp. pepper

1/2 tsp red pepper flakes (optional)

1/2 cup chopped scallions

1 cup shredded cheddar/monterey jack cheese

Sour cream

1 jar of Mother Mary’s Canning Co. asparagus salsa

Corn chips

Brown meat and spices. Drain fat. On a baking sheet, spread meat on corn chips. Cover with shredded cheese. Warm slightly in oven until cheese melts. Remove from oven and top with Asparagus Salsa. Add dollop of sour cream and sprinkle with scallions.
